Savoury Muffins with Bacon, Zucchini and Asiago cheese & with Tomatoes, Green Olives and Oregano

 

Welcome to another food post, the second in just a week. Say what?!? Well yes, because of the cloudy and humid weather, I'm spending a lot of time at home, just chilling, reading books, stalking people online, normal stuff no?

Anyway, muffins are literally a perfect secret weapon for everyone, even for the people who aren't good at cooking but however they want to surprise someone with a tasty appetizer/snack.

Ingredients for 12 muffins:
250gr of white flour
100ml of milk
100ml of vegetable oil
2 eggs
1/2 teaspoon of  baking soda
a pinch of salt
For half mixture add 150gr of chopped bacon, half zucchini, 30gr of Asiago cheese(or any soft cheese) and for the other half use 1/2 tomato, about 10 olives and a lot of oregano.
Procedure: 
In a bowl mix the eggs, the milk and the vegetable oil.
  Pan-fry for 5 minutes the zucchini and the bacon.
In another bowl mix the flour, the salt and the baking soda.
Combine the bowls together and whip the mixture.
Divide equally the mixture in two different containers.
 In a container add the baked zucchini, the bacon and the cheese.

In the other one add the tomato, the olives and the oregano.
Start heating the oven at 180°.
Pour the mixture in the muffin tray. I also used the cake paper case because it is easy to grab them.
Put them in the oven(always 180°) for about 20 minutes.

    1. Yes, they are perfect for a filling breakfast or a brunch. :) You can also made them without the muffin pan, they will look just be shorter and wider(as small tarts)!
